We all enjoyed a nice day yesterday. Played some games, watched a little baseball, started a new Nancy Drew game, and went to the library. Cooper is now a card carrying member and is quite proud.
I made this yummy dessert last night. I haven't made it in awhile. It's very easy, doesn't require a lot of ingredients (and they are usually all on hand), and is quite yummy. It's kind of cakey on the top and totally melted chocolate goo on the bottom. Here's a picture so you can see how delicious it looks. It wouldn't be a good dessert to take somewhere, because it's really best right out of the oven. The Captain puts vanilla ice cream on his for a nice melted chocolate, vanilla treat.
Chocolate Cobbler
1 cup flour
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
2 Tbl cocoa
1/2 cup milk
3 Tbl melted butter
1 tsp vanilla
Sift dry ingredients into 9" square pan. Stir in milk, butter and vanilla. Spread evenly.
Mix 1/2 cup sugar, 1/4 cup cocoa and 1/2 cup brown sugar and sprinkle over batter.
Pour 1 1/2 cup water over the dry topping.
Bake 350 degrees for 30-45 minutes until top is cooked.
Go to church people.
