It has corn in it, so it must be healthy

Want a yummy and easy recipe? Try this one.

Connie made this for our family's January Birthday Dinner Celebration last weekend. We all but licked the soup pot. I'm not kidding. It was that good. And, I'm pleased to report that her personal trainer gave it to her, so it must be very healthy and very good for you. **cough cough**


Work-Out Paul's Shrimp and Corn Chowder
4 cans cream of potato soup
8 oz. light cream cheese (See? It's LIGHT...)
3 T. butter or margarine (He uses Smart Balance...yes, of course he does....)
1/4-1/3 c. chopped onion
dash of garlic salt
dash of cayenne pepper
3 soup cans of milk
1 can sweet corn, drained
6-8 oz. frozen salad shrimp (He uses more to "up the protein" like a good trainer would...)


Saute onion in butter in the pot you will be using for the soup. Add garlic salt and cayenne pepper.

Stir in soup, corn and 1 1/2 cans of milk.

Soften cream cheese and put in blender with the remaining 1 1/2 cans of milk. (Connie said she just put the cream cheese directly in the pot and it melted. She didn't put it in the blender. But if Work-Out Paul finds this out, he'll make her do an extra 25 lunges, so don't tell....)

Pour cream mixture into the soup mixture and stir.

Add shrimp last. Cook until shrimp are thawed and warm.

Yields 8-10 bowls of soup.



I'm telling you people. This was deeee-lish! And doesn't it sound easy? But I'm thinking if I make it too often, I'll be giving Work-Out Paul a phone call...

I actually sauteed the shrimp in butter before I put them in, but I'm not gonna tell him that either.

It really was delicious, but with butter, corn, and shrimp it had to be good. And (don't tell Paul this either,) the way Connie likes butter, one never knows just how much she put in it.
